After upgrading to Pro 7.5 and above there is no option to release work orders.

In order to release/un-release a work order, the work order must be exploded and contain a valid WIP account. After upgrading from a previous version of Sage Pro ERP the a WIP account may not have been setup. The WIP account can be assigned in Inventory Control from the File – Change Setup Information in the accounts section. After defining a WIP account all exploded work orders will be available to release and un-release.
